Ingredients
450g/1 lb apples, peeled and finely diced (eating or cooking apples can be used)
150g/5 oz brown sugar
2 eggs, beaten
75ml/3 fl oz vegetable oil
100g/4 oz plain flour
100g/4 oz wholemeal flour
2 level teaspoons bread soda,sieved
2 level teaspoons ground cinnamon
150g/5 oz raisins
75g/3 oz walnuts, chopped
Apple Muffins
In a large bowl toss together the diced apples and sugar.
Add the eggs and oil and mix well.
In a second bowl mix together the flours, bread soda and cinnamon.
Add the flour mixture to the apple mixture and stir until just combined.
Stir in the nuts and raisins.
Spoon into the bun or muffin tins that have been lightly oiled or lined with bun cases.
Bake for 25 minutes at 180°C/350°F/Gas 4.
Remove and leave to cool, then enjoy!
Note: It is very important not to over-mix when combining the flour and the wet ingredients or when adding the nuts and raisins. These muffins are great as they freeze well so you can make them in advance. When they're cool, wrap individually in aluminium foil or put into freezer bags. They should be thawed at room temperature.
